法國餐

法國餐

  中國俗語有謂:「民以食為天」,若與法國人相比,恐仍有相當距離。昨日讀到一則新聞,說法國人是世界上花最多錢用膳的民族。法國人愛吃,也享受吃,細味品嚐的晚餐,得花上幾小時的功夫。一頓法國餐不單菜式多,用料和烹調均講究,不要小看都是一小碟接一小碟的菜式,廚師是毫不吝惜製作時間和工序的。所以,欣賞法國餐除了入口的味道外,更重要是體會每道菜的製作過程,從而欣賞廚師的技藝。

  菜式複雜的法國人,在政治方面也採取同一樣的哲學,不會粗枝大葉,更不會如蠻牛般亂闖。美國人以解放法國而自豪,但法國人卻少有感激之情,在商貿和政治利益上均會美國不時針鋒相對。美國的敵人不少時候卻是法國的朋友,法國政客懂得充份利用自己的優勢,盡取左右逢源之利。

  被外間評為只顧談情不理政務的新任法國總統薩以科齊,在北京奧運議題上的發揮,可謂花樣百變。他首先在西藏問題上公開採取了嚴厲抨擊中國的態度,煽動起歐洲的反中情緒,繼而縱容示威者襲擊奧運聖火手,又掀頭說要抵制奧運會。一時之間令中國吃了不少苦頭,顯示法國在國際社會對中國事務的影響力。

  急攻一輪之後,他又以金晶事件借力打力。一面譴責襲擊金晶的示威者,擺出要為聖火隊平反的姿態,彷彿當日的亂象與法國政府一概無關似的。當中國百姓強力抗議之後,薩以科齊又派員在中國大打溫情牌,親訪金晶並送上總統的慰問信。這一招給反法的中國民眾一個交代及下台階。可是,與此同時,法國又頒予達賴喇嘛和胡佳榮譽市民稱號,直接干預中國內政。

  左右同時出招,又軟又硬,無非是要說明:「我法國人不好服侍的!你們要小心點呀!」

为湾区餐馆的生意更好,能否宣传一下在保持中餐特色的基础上,也吸取一些西餐好的地方,如少油少盐,多新鲜疏菜等,于身体建康的饮食方法。湾区有不少双职工家庭和单身,长期常常在外吃,为了这批人的身体建康,和生意更好,能否呼吁餐馆改进一下。

The healthest meals is the ones that you prepare for yourself (or family). You basically control what goes into your food.

I know it is hard to do that.

The restaurants will stay in business if their products are accepted; tastes, and price, service.

Mildly-seasoned foods will most likely turn customers away, unless you state this before the sale.

It is up to the customers to pay for such food.

By the way, fast food chain stores failed in tofu burgers or veggi burgers, instead they put more beacons and beef patties into their products.

Fat means flavor, that is kitchen talk.

Once upon a time, I saw a statement printed on the glass-door of a restaurant; it says "This is not the right place if you are on diet".

You want tastes, and health together, you just have to pay the price, not necessary in terms of money, but efforts.

You pay what you get. Efforts cost money too. Are you willing to pay the price? How much are you willing to pay to get a prepared-meal after work?

About French cooking, they utilize animal fats most of the time.

Butter is also a thickening agent to create a creamy sauce. I am sorry they seldom use corn starch to do the thickening.
